Two Michelin-starred chef Johannes King to host exclusive dinners at Niyama

German chef Johannes King jets into Niyama to host two exclusive five-course dinners. Owner of the Michelin-starred Söl’ring Hof, Chef Johannes will serve modern European cuisine paired with a selection of wines in a stunning setting 500m out in the middle of the Indian Ocean.

Chef Johannes began his career at the prestigious Franz Keller restaurant in Cologne specializing in French nouvelle cuisine. He then trained under master pastry chef Karl Schumacher at Vienna’s Konditorei Oberlaa, perfecting the traditional desserts for which the café is renowned. Chef Johannes relocated to Berlin to work at Henri Levy’s Michelin-starred restaurant, Maître, then joined the culinary team at the InterContinental in the upscale Tiergarten area.

Chef Johannes found his passion for fresh, seasonal, locally sourced dishes at Hôtel de la Poste on the Côte D’Or, known for its regional Burgundian cuisine. His experience here inspired him to open his own destination restaurant in 2000. Söl’ring Hof on the island of Sylt commands two Michelin stars and 17 Gault Millau points. Gourmands from far and wide have made the pilgrimage to the island to taste Chef Johannes’ modern textures and light flavors in a surreal landscape.

For two evenings only, on 29 January and 2 February 2018, Chef Johannes will bring the cuisine of Söl’ring Hof to Niyama’s Edge. Edge is a modern, fine dining paradise accessible only by speedboat. Set out over the lagoon tinged with the hues of sunset, Edge offers wrap-around seating under a billowing white canopy and sits above the Maldives’ only underwater playground, SubSix. Across Niyama’s two islands, Play and Chill, guests are treated to one-of-a-kind epicurean adventures, from Asian avant-garde cuisine in the treetops to South American barbeque deep in the jungle.

In conjunction with World Tourism Day, Hotel Jen opened its door to hospitality and tourism students from the Maldives

Hotel Jen welcomed several groups of hospitality and tourism students from Ahmadhiyya, Kalaafaanu School and Maldives National University for a private tour of the hotel, both front and back of the house, in conjunction with World Tourism Day from September 27 till mid-October 2015. The students had a valuable interaction session with the hotel’s senior management staff.

Selvarathinam Thangavel, Hotel Jen’s training manager, welcomed the visiting students and the lecturers and, introduced them to the hotel’s senior management staff, who ran a series of valuable informative sessions introducing respective areas of responsibility and what a day at work inside Hotel Jen is all about.

Mr Thangavel briefed the students on Hotel Jen’s pride in and commitment to giving back to the local community in various ways; such as through CSR activities and, Awareness and, youth projects, including internship programmes, which serve as vital exposure and “hands-on- experience” that boosts chances when seeking employment.

The Maldives’ core economy is tourism hospitality and the opportunity to excel here is limitless for those who not only dare to dream, but also put in the effort.

Mr Thangavel added a note of appreciation and thanks to the lecturers of Ahmadhiyya School, Kalaafaanu School and Maldives National University for organising the trip and, giving Hotel Jen the opportunity to share its knowledge.

Appointed staff from the Human resource Department, under the guidance of Mr. Thangavel, led the visiting students on a personal tour of the hotel, from the lobby, to the outlets, guestrooms, spa and then to all areas not seen by guests, such as the kitchens, linen rooms, workshops, staff areas, offices, and so on.

The tour ended with a stop at Hotel Jen’s magnificent rooftop Restaurant, Azur and the highest dining outlet in the Maldives. The visiting students and lecturers were taken aback by the amazing feel of the restaurant and terrace overlooking the infinity pool and the million-dollar view, as always with everyone else the students had a ball of a time with selfies.

The students and lecturers were treated to some tasty refreshment with Jen’s hospitality at Lime Restaurant, the hotel’s all-day dining restaurant.

The school’s lecturers showed their remarkable appreciation by expressing how much the students enjoyed the trip and how it opened their eyes to not only what Hotel Jen is all about on the inside, but also what it takes to keep it going as the leading hotel in Malé, at the mention of which all the students cheered.

Summer Island Maldives’ Chef Receives Global Outstanding Chef Award

Summer Island Maldives resort’s Advisory Executive Chef, ‘Jack’ Tiang Toh Huat, has been declared one of the world’s Top 50 ‘Outstanding Chefs’, in a prestigious awards ceremony held last week in Shanghai, China.

Summer Island Maldives also received an award for ‘Outstanding Dining Venue’ at the 2016 Global Gourmet Chef par Excellence World Culinaire Competition awards ceremony.

The double award places Summer Island Maldives, which recently underwent a multi-million dollar refurbishment, among the Maldives very best resorts for food and beverage.

The prize ceremony, organised by the Global Gourmet culinary magazine, followed a competition in which chefs from around the world were invited to cook a four-course meal, which was then judged by an expert panel that included the Michelin 3-star celebrity chefs Da Dong and Umberto Bombana.

Chef Jack submitted a menu based on fresh ingredients found on Summer Island Maldives, such as coconuts and passion fruits, and from the surrounding sea.

Commenting on his award, Chef Jack said:

“I wanted to submit a menu that would highlight the elements of the Maldives – the sand, the sea and the natural vegetation. To represent sand, for example, we made a dessert that used fresh, grated coconut and brown sugar, to look like the beach. We also used fresh tuna in the menu because the Maldives is famous for its tuna.”

Style of the South at Canareef

People in the Maldives’ southern atolls have always liked to do things a their own way. They talk a little differently, they’re fiercely proud of their islands and they have a strong independent streak.

At Canareef resort, perched below the equator on the most south-easterly point of the archipelago, things are no different. Their refreshing take on the Maldives’ experience encourages you to embrace the sun the sand and the South.

Stretching down the eastern side of the heart-shaped Addu atoll, Canareef suns itself on the island of Herathera – the longest resort island in the country. Between the hydroponics garden in the north and the snorkelling point on the south, lies 4.5km of beaches, lakes and water villas amid unspoiled tropical greenery.

Around 200 metres at its widest point, the west of the island gazes out across the spearmint lagoon to the atoll capital, Hithadhoo. On the east, a series of lakes – known locally as kilhi and found only on a few larger islands – provide an area of serenity between you, 2000 miles of ocean and Sumatra.

Similarly, due south from Canareef lies nothing but open seas and perhaps the odd top-secret research facility before reaching Antarctica (sea-lions and shivering scientists wish they were in your kind of south).

Dhoni Bar

Canareef is one of the Maldives’ larger resorts, with 271 villas still leaving plenty of room for three restaurants, a fitness centre, watersports centre, spa, and miles of sandy lanes on which to pedal along on bicycles provided for every room.

The resort’s grand scale is most notable in the main ‘Dhoni bar’, which can only be described as a beach ballroom. Shaped like an upturned boat, the enormous hall combines day-beds, cocktails, board games, ping-pong and pool, all on top of soft white sand. Outside, the second largest pool in the Maldives makes this the perfect place to idle while the sun sets over Hithadhoo.

Elsewhere, the nearby ‘Kilhi’ restaurant offers sea-level dining in its private bunkers looking out over the Laccadive Sea, while Meeraa restaurant further along the island offers views over the lagoon and Asian cuisine by the pool. 

Canareef’s beach villas are divided into three types for those who like the sunset, the sunrise, or those who prefer the night sky from their private jacuzzi. The wooden bungalows offer bright interiors opening out onto even brighter exteriors, where comfy loungers blend into sand and southern sea.

In addition to its size and scenery, another unusual element of Canareef is its connection to the neighbouring island of Hulhu-meedhoo. Separated by only a narrow channel to the north, the morning commute of many of the island’s staff across a small footbridge, is unique in a nation of isolated islands.

Guests can head in the opposite direction, with local island tours allowing them to visit some of the Maldives’ most important historical sights – in particular, the beautiful Koagannu cemetery, the oldest in the country.

For those seeking more adventures in the southernmost atoll, trips across the lagoon will take you from the former British air base in Gan to the precious Koattey mangrove area in Hithadhoo via the Addu link road – one of the longest in the Maldives.

Your visit to the atoll wouldn’t be complete without a trip to the other south, the one beneath the waves that is. Addu is home to a number of world class dive sites, with 25 to choose from, including wrecks left behind by the British, year-round manta sightings and vibrant coral patches. Conrad Maldives Rangali Island Unveils Striking New Beach Villas

Reinforcing its position as a champion of smart luxury, the iconic Conrad Maldives Rangali Island has emerged from refurbishment as one of the Maldives’ most applauded resorts.  In a strategic move to continually attract guests, the resort has invested US 3.2 million in redeveloping its award-winning beach villas which are set to launch this October.

The Outrigger Konotta Maldives Resort has won “Best Resort” in the Travel Weekly Asia 2016 Readers Choice Awards.

The stunning 53 all-pool villa resort in the south of the Maldives has wowed visitors since it opened in August 2015.

The award “honours the ‘best of the best’ in the travel industry,” said Travel Weekly Asia Group Publisher, Irene Chua.
